Schilling Cider Company was founded in 2012 by Colin Schilling, who also serves as master cider-maker as well as owner. Cider making runs in the family – it’s been a tradition in the Schilling clan since the 1970’s, and Colin started making cider when he was 14 years old on the Idaho farm where he grew up.
Inspired by his great-grandfather August, who founded the Schilling Spice Company in San Francisco in 1881, Schilling’s ciders feature a wide array of flavors and spices (their cider line up have included flavors such as Sriracha Lime, Ginger, and Spiced). Schilling uses only fresh pressed apples, never back-sweetens their ciders (the addition of a sweetener close to bottling), and use locally sourced, non-GMO ingredients.
Schilling Cider House in Fremont features 32 ciders on tap – the most of anywhere in the country – as well as over 300 bottles of specialty craft cider for sale.
The Schilling Tasting Room is located in the center of their Auburn manufacturing facility, and features pool tables, ping pong, and other games.
